Appears as white amorphous, tasteless powder. Irreversible gel formation occurs in hot water; swelling can be induced at room temperature with such compounds as formamide, formic acid, and strong bases and metallic salts.
Starch is a reverse polysaccharide in plants (commercial sources include: corn, potatoes, tapioca, rice, and wheat).
Uses: Adhesive (gummed paper and tapes, cartons, bags, etc).
